  • Proper way to prep potatoes

    Hi fellow campers

    I had a question that I couldn't find an answer to online.

    I'm camping this weekend at Camanche Reservoir in CA. My plan is to bring golden yellow potatoes for a few meals (2 breakfast. 1 dinner). Feeding two. Cooking on cast iron.

    I'm questioning the best prep method.

    Do I cook, cut and freeze them beforehand? (Or at least cook and cut)

    Or bring them as-is and cut them up as needed and simple cook them on the spot?

    They seem like a softer potato that would cook up quickly.

    You can cut and partially cook them then flash freeze 'em. The freezing will keep the flesh from turning colors. The only time I don't blanch in advance is shredded potatoes. Those I squeeze as much liquid out before freezing for crispiness.

    Yellow taters also cook nicely on a grill. Just slice about.........1/4" - 1/2" thick ( I leave the skin on), throw in a container w/ a lil oil and your fav herbs (I'm partial to rosemary) and salt and pepper to taste. When the potatoes are coated and the grill or CI skillet is hot enough saute them for about 6 minutes.

    I used a non electric waffle iron for the above but bet it will still work nicely with a cast iron skillet.

    July 3 to July 16- annual kiddo trip
    Aug 2 to Aug 14- adult trip to recover from kiddos' outing. Bring on the Campari!
