Slumgullion is a traditional term used to describe the stews made on trail drives in the early days with the leftover beef parts. Liver, kidney, tripe, intestines, etc. It was usually cooked low and slow in a Dutch with a lot of flavoring like chiles and garlic. Done properly with fresh ingredients, it is quite edible.
