  • Foil Packets with Beef

    I'm not a big beef eater, but I'm going camping next week (after a long hiatus), and have a hankering for one of those nice foil packets cooked on the coals. I'm thinking some kind of beef in chunks (like tenderloin or porterhouse) with 'taters and onions and veggies, but the thing is, I can't find a recipe. While I was just looking for ideas, the absence of such ideas makes me wonder if there is something fundamentally wrong with this particular idea.

    Any suggestions or thoughts? Or, give me your favorite 'foil packet' meal!

    To answer my own question, I consulted, and found this recipe:

    Tin foil Stew 6 ounces blade roast, trimmed and cut into 1 inch cubes
    1 sweet potato, cubed
    2 carrots, sliced
    1 onion, chopped
    1 clove crushed garlic
    1 pinch salt
    1 pinch ground black pepper
    1 tablespoon butter
    1 tablespoon water
    other herbs and spices

    I'm going to use sirloin, cut into strips and marinated. I'll let you know how it turns out, in case anyone is interested besides me.

    (the usual foil cooking tips apply....)

        I will certainly report back! I'm thinking 1/4 inch strips, marinated, will cook faster....and keep up with the veggies. We'll see! If it works, and I'll let you know.
