Shawn's Quesadillas!
Howdy,
Now that I got child through cooking school and he is working in Minnesota(he really likes the cold & snow too) here is his own designed quesadillas and he really likes all the outdoor activities in that beautiful frozen land. He owns a canoe, truck, ice house for fishing, fly & plug poles, showshoes, cross-country skis, 70lb pull hunting bow(just like his pops) and his wife, Lisa who is great with a fly rod!
Ingredients:
8 corn tortillas
2 chipotle pepper in adobe sauce
4 ounces pepper jack cheese
1 cup salsa
2 teaspoons olive oil
Directions
Finely chop cheese & chipolte pepper(prepared at home). Place a tortilla in a lightly oiled lightweight skillet(or just camping, use cast iron); top the tortilla with pepper, cheese and salsa. Heat until cheese melts, then fold the tortilla and flip it. Toast the opposite side, then eat. Repeat as neccessary! Easy!
