  • Raspberry Stuffed French Toast

    8 slices of bread

    1 small tub soft cream cheese

    3 eggs

    3 Tbsp. raspberry jam

    1 cup milk

    Butter

    Dash of Cinnamon

    Syrup

    Beat cinnamon, eggs, & milk with wire whip until frothy. Mix cream cheese and jam together in a small bowl(when camping I use paper bowls). Spread layer of cream cheese filling between 2 pieces of bread like a sandwitch. Dip bread in egg mixture to coat both sides and cook on a griddle(cast iron) until egg is set and bread is golden brown. Serve with butter & syrup or more raspberry jam. You can also do this with apricot, strawberry jam, etc.
    Its a nice litle variation to regular old french toast.
