          It began on a trip that came up short of fish. The only meat we had on the final night was Spam. Tradition dictates that whoever catches the fewest fish must eat Spam on the last night. In practice, the unlucky angler opens the can and cooks it, but everybody joins in. It's actually not bad when grilled over an open fire.

            July 3 to July 16- annual kiddo trip
            Aug 2 to Aug 14- adult trip to recover from kiddos' outing. Bring on the Campari!

              Lovely looking dishes, markee.

              The first one is....a fresh fruit granola or oatmeal?
              Pic 2: avocado and cherry salad ?
              Beets, tomatoes and not sure what else...maybe some tofu?
              Chili! WooHoo!
              A bowl of various blue berries:yup:



              I like that a lot of fossil fuel isn't needed to make your meals........for my upcoming trip I KNOW I'm using too much heat.

                  First photo is home made granola with yogurt and fresh picked berries.

                  Second photo is a salad with fresh avocados and organic blueberries that we picked.

                  The beet salad has so many ingredients that I don't remember. we used apple cider vinegar for dressing. I do remember that we used a lot of sweet onions.

                    I'm currently enamoured with a dish I've made for home use and took camping this year:

                    Chicken and Andouille Sausage Gumbo

                    Made it following this recipe for the most part:

                    but instead of following the blog's method of making roux, used AB's technique which doesn't change the finished flavour and is less labour intensive:

                    Preheat the oven to 350 degrees F.
                    Place the vegetable oil and flour into a 5 to 6-quart cast iron Dutch oven and whisk together to combine. Place on the middle shelf of the oven, uncovered, and bake for 1 1/2 hours, whisking 2 to 3 times throughout the cooking process.
                    I also make up a batch of nola's "Creole Seasoning" minus the salt but am sure you could use any store bought mix you prefer/have on hand.
                    Froze the chicky and sausage gumbo in a zip loc bag as well as a batch of the site's "Creole Rice". Threw the gumbo base into a skillet over the Weber and when it began to bubble added two steamed 1-1/4 lobsters (claw meat and tail, split lengthwise) plus all the juices and a handful of raw 21-25 ct shrimp (tails on for extra flav) to the pot which I covered with foil as pot cover. Interim, put the rice in bag into a pot of boiling water via the Coleman and when heated through (maybe 3-5 mins), opened bag and placed a 1/2 cup of rice atop each bowl of gumbo. Seriously good eats with a green salad on the side.

                    This is a pic of a version I made one New Year's Eve ( No. I do not camp with bone china...but but heyyyy that's an idea?!:D) since we immediately dug into the campsite version w/o photo taking session. Since I've been "commanded" to duplicate this recipe for our August camping trip, I'll try to 'member to take an outdoor pic:
